come on sweet catastrophe

this was my dinner tonight:

chicken tortilla soup. i got a crockpot for my birthday, so i broke it in tonight. the recipe is here (i've had it saved in my bookmarks forEVER!). i halved it and modified it a tiny bit, adding a beans and corn, and a tad more salsa. it was delish, and easy peasy. i'm happy i have a bunch of leftovers!

so now that i have a crockpot...anyone have any good recipes to share? pretty please? :)

Mmm, I have a couple that a easy peasy:

Roast - Salt and pepper a roast liberally, then sear in about a tablespoon of oil on medium-high (you could skip this step but it keeps the seasoning on there); place roast in crockpot. Chop an onion in wedges and put around roast. Pour in a can of cream of mushroom soup, beef broth and one can of water. Lastly, pour in one packet of onion soup mix. Cook on high 5-6 hours or on low 8-10 hours...yum!

Also, you can make great snack foods like velveeta cheese dip: chop up one giant block of velveeta into into squares, add a can of rotel tomatoes, and (optional) 1/2 - 1 lb, depending on taste, cooked ground beef. I take it to every party I go to cause its so easy and yummy.

Lastly, Pulled Pork Sandwiches. These are the hubbies favorites and great for lunches. Get around a 2 1/2 lb. pork shoulder; put in crockpot. Cook on low 10-12 hours or high 5-6 hours. Remove roast from crockpot, discard liquid. Shred pork with two forks; add 1 bottle honey bbq sauce, 1 tbsp. lemon juice, 1 tsp. brown sugar and cook on high 1 hour or low 2 hours...serve on buns!

Super easy & delicious!

3 to 4 pound boneless pork roast
1 can or bottle of your fave beer
1 cup BBQ sauce

Put roast in crockpot. Add beer. Dump BBQ sauce on top. Cover and cook on low for 8 to 9 hours.

That's it! Sooo yummy.

mmm that looks good. jamie b gave me a good one but its ew/ ground beef, and similar to that chicken one. it's called taco soup.

also- put a pork roast w/ a can of diet coke in crock pot. no diet coke flavor, but it comes out like carnitas. also salt and garlic if you want.

I should write, "Crock-potting for Idiots". Love how easy it fave:
In the morning, put frozen rock-hard tri-tip roast in pot, add cut carrots, potatoes (skin on is great), onions, 2 cans Campbell's Cream of Mushroom soup (I think I've used their garlic C.O.M. soup too - great!), 2 packs of Lipton's dry onion soup, and fill to top with water. Put on high and walk away. Dinner ready at 6! A yummy extra: but small round sour dough or french bread, cut off top, dig out some of the bread, then fill it with your pot roast stew - YUM!

I LOVE chicken tortilla soup. :D I make my own all the time. Actually, I'll probably make it some time this week... :D Then I'll have to post the recipe on my blog. Pretty much the same... with a bit more seasoning, and it's probably spicier. :) Spicier? Is that spelled right?! Hmm...

Anywho... I don't have a crockpot. I have a rice machine though, and I hear that I can use it as one.

Pot roast... yummy. :) (I see someone already said that, but I'll post it anyway...)

I do... 2 pounds of roast... about 4-5 cups of broth (I just add beef stock to water). Sprinkle roast with Montreal Steak Seasoning (WAY better than any other seasoning) and put on frying pan for a few minutes both sides. Then add one onion, sliced. (I put the slices UNDER the roast before I put the broth in. Then on TOP of the roast ... the liquid doesn't cover my roast.

Don't forget to make mashed potatoes with that! I use red potatoes, so I don't have to peel them. (Tee hee). Mash or mix with butter, sour cream, milk, minced garlic, salt and pepper.

Make gravy by adding milk (1/2 cup with a tbsp or two of corn starch) to simmering broth from roast.

My favorite meal. YUMMY!
